The story

Passover recalls how God freed the people of Israel from slavery in Egypt, through Moses and the ten plagues. The name Pesach, "passing over", recalls that the plague passed over the Israelite homes. They left in such a hurry that their bread had no time to rise, and so matzah is eaten.

It begins on the 15th of Nisan, in spring, and lasts eight days outside Israel (seven in Israel).

How it is observed

Before the holiday the home is cleaned of all chametz (leavened bread and grain products). On the first two nights families gather for the Seder, reading the Haggadah, which tells the story in order: four cups of wine, the four questions asked by the youngest child, matzah, bitter herbs and a festive meal. During the eight days no leavened food is eaten.
